OUR WINE & MEAD COLLECTION

The wine grapes are sourced from within California, primarily within Sonoma County but also some sourced from local San Diego vineyards as well as some white varietals sourced from Columbia Valley in Washington. The fruits and honeys secured for the meads are all primarily sourced from California & Arizonia beekeepers. The wines and meads are all produced at our production facility in Escondido, California, where most are aged in either oak or stainless steel barrels and bulk aged to perfection before bottling.

Cherry with Hibiscus Melomel

Tasting Notes: Deep, red color - floral aroma with a smooth, sweet taste, balanced with a slightly bitter finish. The honey flavor is pronounced, but not overpowering, and the hibiscus adds a subtle complexity to the flavor profile. Aged in a Bourbon barrel for 6 months.

Tasting Notes: Intensely dark no water added only pressed blueberries and Blueberry blossom honey. Aged in a Rye Whiskey Barrel for 6 months. This is a Full bodied mead that satisfies the soul. Great mix of blueberry with a hint of rye whiskey

Black Currant & Dark Chocolate Semi Dry Melomel

Tasting Notes: Dark chocolate nose with complex dark berry, low sweetness and moderate tart flavors up front. Complex, medium-high tartness oak structure in the middle. Finishes with a sharp black currant and dark chocolate texture that lingers on the back of your palate.

Sword Maiden’s Savor

Pear, Chai, Vanilla, Semi-Dry Melomel

Tasting Notes: This mead was the winning mead for the 2022 Cattle Battle mead competition. This mead combines the natural sweetness and delicate flavor of pears with the rich, complex notes of honey, chai and vanilla. The result is a refreshing and aromatic beverage that tantalizes the taste buds and leaves a lingering, satisfying finish.

Tasting Notes: Wonderful blend of Honey and full of dark fruit character with blackberry, raspberry and blueberry notes. The acidity is well balanced against that fruit character.

Pomegranate Melomel Semi – Dry

Tasting Notes: This semi-dry mead is made with pomegranate, wildflower blossom honey, and aged in bourbon oak barrels for over six months. Reviews note that it has bright pomegranate acidity, a well rounded bourbon barrel taste on the finish, and light mellow notes from the wildflower blossom honey.
